Pão de Queijo carries such simbolism and nostalgia to me ... it was only natural to share with you all. My paternal grandma made the best one, using farm's milk and cheese, and sometimes, only sometimes when I am baking it, I can smell her kitchen and that memory truly transports me to that time and place.
Made with a blend of tapioca starches polvilho, milk, cheeses (Mozzarella, smoked Gouda and Parmesan), eggs and salt, best accompanied with a hot cup of black coffee.
Bake at 370 for about 30-35 minutes depending on your oven. Start checking around 20-25 minutes.
